SPINACH COOK WITH POTATOES

SERVES 4, PREPARATION 15 MINUTES, COOKING 30 MINUTES

You need:

  • 400 g of frozen spinach
  • 1 tablespoon of butter
  • 1 small onion
  • 2-3 cloves of garlic
  • 1 tablespoon of flour
  • 100 ml of vegetable broth
  • salt, pepper to taste
  • 3 tablespoons of whipping cream
  • 4 eggs
  • dried chili pepper

For potato chips:

  • 1-2 potatoes
  • oil or bacon for frying
  • salt

ACCESS:

  1. Let the spinach thaw. You can also use frozen spinach leaves and chop them up a bit, so the mixture will have a very nice texture.
  2. Put a tablespoon of butter in the pot and let it melt. Add finely chopped onion and fry. Add the crushed garlic and reheat for a minute. Mix a spoonful of flour, pour broth over the roast, mix well and add thawed spinach. Season with salt and pepper to taste and cook to cook the flour.
  3. Cut the potato into thin slices for chips. Dry the slices well with a paper towel and fry in heated oil or lard until golden. Drain on a paper towel and season with salt.
  4. Finally, soften the mixture with cream and you can serve it with potato chips, poached egg and dried chilli.
