Time is precious in summer, you should enjoy yourself more and spend less time in the kitchen. Finally, in the summer heat, long baking is not pleasant. What delicious things can be made from juicy seasonal fruits in less than 30 minutes?
Summer fruit cake
Simple, quick, always delicious: this colorful sponge cake is super juicy. Depending on the season, it tastes good with fresh, frozen or canned fruit.
Of course, it is most delicious with fresh fruit, and you can combine several types on one plate – for example, strawberries, raspberries, cranberries, blackberries, blueberries, but also cherries, sour cherries, apricots, plums, apples or pears.
250 g butter, soft
170 g of sugar
5 eggs, medium sized
200 g of wheat flour
200 g ground almonds, walnuts or flour
17 g (1 ½ PL) baking powder
130 ml of milk
800 g of fruit
Preheat the oven to 180°C. Grease and flour a baking sheet or use parchment paper. Wash the fruits, cut them as needed.
Beat the softened butter with sugar until foamy. Mix the eggs one at a time into the butter mixture. Mix the flour with the almonds and baking powder and add to the dough alternately with the milk. Mix intensively, the dough should pull away from the spoon, if necessary, add a little more milk.
Spread the dough on the baking sheet and smooth it out. Spread the prepared fruit on it. Bake in the hot air program for approximately 20-25 minutes.

Red-white-blue berry goodness
A great dessert made from fresh berries that is also suitable for a party.
5 cups of raspberries or strawberries
¾ cup powdered sugar
¼ cup fresh orange juice
1 1/3 cups of mascarpone
1 ¼ cups of cold whipping cream
½ teaspoon of vanilla extract
a little salt
20 to 24 oblong sponge cakes, broken into 2.5 cm pieces
2 ½ cups blueberries
In a medium bowl, combine the raspberries with ¼ cup sugar and the orange juice. Press the berries lightly with the back of a fork to release the juice and let stand for 10 minutes. Meanwhile, in a large bowl, mix mascarpone and ½ cup sugar until smooth. Add the cream, vanilla and a pinch of salt and beat for about 4 minutes.
Line a tray with baking paper. Arrange half of the sponge cakes on the bottom, layer the raspberry mixture. Layer the whipped cream mixture on top and add the blueberries. Repeat the layer – sponge cakes, cream, raspberries, cream and top with blueberries. Let harden in the refrigerator for at least 3 hours.

Quick Blackberry Pie
An irresistible cake made from fresh blackberries.
1 cake body
3 cups blackberries
¾ cup granulated sugar
3 tablespoons lime juice, plus zest for garnish
450 g of mascarpone, leave at room temperature
1 ½ teaspoons fresh mint, chopped
Preheat the oven to 210°C. Place the carcass in a greased cake or cake pan, press and cut off the rest. Prick the dough with a fork and let it bake (12 to 15 minutes).
Mix together 1 cup of berries, 2 tablespoons of sugar, and ½ teaspoon of lime juice. Strain through a fine sieve and discard the seeds.
Beat the mascarpone and ½ cup sugar with an electric mixer on medium speed until stiff. Stir in the blackberry puree.
Stir in mint, remaining 2 cups berries, 2 tablespoons sugar, and ½ teaspoon lime juice. Let stand for 5 minutes. Place the mascarpone in the baked body, arrange the blackberry-lime mixture on top. Sprinkle with lime zest and mint.

Watermelon “pizza” – if you need a quick no-bake dessert
“Pizza” with a creamy honey-ricotta topping and lots of fresh berries is the most refreshing dessert for summer. It will only take you 10 minutes!
½ cup ricotta
¼ cup of mild cream cheese
1 spoon of honey
½ teaspoon of vanilla
1 slice of watermelon, about 2.5 cm thick
fresh berries, for decoration
fresh mint, for decoration
toasted coconut, for decoration
In a small bowl, mix the ricotta, cream cheese, honey and vanilla. Spread the mixture on a slice of red watermelon and sprinkle with berries, mint and toasted coconut. Serve immediately.
